We've explored this coffee before; the Las Nubes farm makes for a beautiful cup that can be enjoyed any time of day. The reference to clouds (Nubes) made us think of exploring the "other side" of this amazing farm and a true Canadian legend.
Las Nubes (meaning the clouds) is situated in Juayua, Sonsonate, El Salvador. This farm lies at an altitude of 1450 MASL, on volcanic loam soil. The farm is planted mainly with Old Heirloom Bourbons that are 40-60+ years old. The cherries from this farm are processed at the El Borbollon where they are washed and dried on clay patios under the sun. The combination of volcanic soil, high altitude, good processing heirloom varieties and good terroir gives Washed a differentiated taste.
