Luis Alberto Balladarez operates Finca Un Regalo de Dios. The Bendición lot is Pacamara varietal that is carefully Natural processed.

We visited Luis the first year he began experiments with Natural processing. He committed his entire micro-lot to the experiment, and subdivided the lot to dry in full sun, partial shade, and full shade. He pulled coffee for final washing at various points between 20 and 32 days of drying.

This latest release is a Java varietal. That's hard to find in general, and rare as a Natural process.

It was originally thought to be a Typica selection. But genetic fingerprinting of molecular markers has revealed that Java is a selection from an Ethiopian landrace population called Abysinia.

It represents an interesting alternative to the Geisha, with high cup quality.
