Luis Alberto Balladarez operates Finca Un Regalo de Dios. The Bendición lot is Pacamara varietal that is carefully Natural processed.

We visited Luis the first year he began experiments with Natural processing. He committed his entire micro-lot to the experiment, and subdivided the lot to dry in full sun, partial shade, and full shade. He pulled coffee for final washing at various points between 20 and 32 days of drying.

We cupped all of the permutations, and universally around the table, one example was declared best. Luis now replicates that profile with continued success. It's rare to see this level of dedication and careful process, not to mention the huge cost of losing a lot to an experiment. It has paid off, for Luis, and for us, in an excellent (if somewhat expensive) coffee.
